Still thinking about my February visit to San Miguel de Allende, Mexico. Here is one of many, many beautiful displays of fruits and vegetables.

This was my first try of a recipe for Apple Tart in the wonderful book The Apprentice, or at least the filling is. I used a Fred Meyer frozen pie crust, and yellow apples from my tree. It was GREAT even if I baked it a bit too long. Filling recipe: Core and cut about 4 golden delicious apples (2 lbs.) into 1.5″ pieces. Arrange like spokes in a wheel on pie dough. Sprinkle with 3 tablespoons of sugar and 2 tablespoons of cold unsalted butter, in pieces. Bake at 425 for one hour or until golden. (This was too long or too hot, but that’s an easy fix.) The flavor and texture was superb. It was so quick and easy, too!

Winter in Seattle, so far north, can be challenging when the light is so reduced. But the good part of the low-angled sun is that when it actually is sunny, the light streams in the south windows and makes marvelous shadows. This is my kitchen counter the other day. Seattle has an International Festival in the International District which really seems to be Chinatown, mostly. We went last year, had a great time, and were glad to see it was bigger this year, but I could do without the amplified karaoke. There was wonderful dancing on the Dragon Stage by several Punjabi groups, and the vendors included a food carver, below. Red is the color of good fortune in China, you know, so there was lots everywhere.
